I found this recipe today on Fark (new window) - I haven't made it yet, but I thought it sounded tasty:

Speaking of bacon covered breasts... Take 1 chicken large skinless/boneless chicken breast and cut it in half the long way. Marinate this (in 1/4 cup soy sauce, 1/2 cup olive oil and 1 cup pinapple juice & 2 cloves finely chopped fresh garlic) for about 1hour (minimum). Remove chicken and pat dry with paper towel. When the chicken is relatively dry, wrap the breast halves (fairly tightly) with (this is important) extra thick appelewood smoked peppered bacon. this should be done in such a manner as to create a spiral of bacon from one end of the breast to the other so that a pre-soaked bamboo skewer will catch the bacon from both ends the long way. Feel free to curl up the thin ends of the chicken breast so you don't have any loose ends to burn on the grill. (This arrangement should leave you with a mostly bacon covered breast with some chicken still showing, similar to the bacon bra photo.) When skewers are prepared, they can be left in fridge for about a day. Anyway, these should be cooked over a hot charcoal fire for about 20-25 min. turning every 3-5 minutes. Voila! BBQ BACON BREASTS!
